BEST OF 3 ! MY FAVOURITE STREET FOOD RECEPIES !

 1) Vada - Pav , Pav - Bhagi and Misal - Pav are my favorite street food recipes. 
Vada - Pav : Mumbai's most popular street food ---- a, spicy potato filling sandwich between bun and layers of spicy garlic ( Dry) and ( Liquid) green chutney. Vada- Pav , is one of the most famous street food. It's almost synonyms with city. This popular street food is loved by everyone and every generation.
Exactly Vada- Pav is , Vada = Deep fried potatoes parties blended with the lequid basan and pav= burger buns.
It is a kind of potato sandwich or burger, but what makes it so special is all chutneys that go with it. 
This recipe has 4 main ingredients , The Vada , Dry garlic coconut chutney, the liquid green chutney and sweet tamarind chutney .
This is a long recipe and does take some amount of skills and pre work preparation. But trust me, one bite into these diliciousness and it will all seem worth it.
8 main steps process to make homemade vada- pav.
* Make garlic ( Dry) coconut chutney along with red chilli powder, pinch of sugar and required amount of Salt , 
* Make liquid green chutney  along with coriander leaves, some green chillies, pudina pata and required amount of Salt. 
* Make sweet tamarind chutney , Soke tamarind day before in warm water, use stained complete water and boil liquid along with the required amount of Gudha ( jaggery)  
* Take some green chillies, garlic flex, little piece of ginger ( Finley cut into pieces) sothe all these ingredients along with some amount of Oil , once it shapes into light brown colour remove it from the heat. keep it aside, let it cool and then grind evenly ( don't make a paste ) take aside. 
Take a pan put some amount of Oil once it heated put some coriander seeds , Once it gets properly heated, mixed with the evenly grinded mixture and pinch some amount of turmeric powder, spread all these ingredients above the smashed potatoes and mixed it up properly along with required amount of Salt. Sprinkle finely chopped coriander leaves and make potato balls , aka the Vada .
* Make batter of besan to deep the vadas.
* Fry vadas in hot oil 
* Finally assembled it all together.
As you have noticed, there are multiple steps are involved and if you don't have a time to do all things in one day.
I suggest to make all chutneys in advance.
This way you only have to make vadas when you want to serve it.
Remember the chutneys all stay guilt good in the refrigerator for week. 
2) Pav- Bhagi : The Second lip Smacking Aromatic Street Fast Food , Originated In Maharastrian Cuisine. 
Before proceeding further, I would like to share What is Pav Or What it's origins ? 
As deep I want let you know about this quintessential indian Snack food. I found the name " PAV" Originates from the "PORTUGUESE" " PAO" which means Bre.... read . 
Bhagi means veggies in marathi ( Maharashtrian Language) 
Pav- Bhagi : Where a pav roasted in butter and served with spicy thicked mashed vegetables, garnished with finely chopped crunch onions, green chillies, dash of lamons and sprinkled with finely chopped coriander leaves.
Pav - Bhagi was later served in india and abroad too .
This Maharashtrian food which is now available in around country in different variations. But preparing the original version of pav - bhagi the one thing which attracts any passer by about pav - bhagi is its aromatic smell which comes from it's unique preparation of masalas that aroma doubled your hunger .
This famous mumbai chaupati street food pav - bhagi as it's includes an all sorts of vegetables you may add vegetables of your choice. Which is the best option for your kids with less spicy, oil with lots of vegetables which you would like to feed them. 
Steps : First you need to clean and rinse all vegetables. Make them into small pieces. 
Note : Avoid knife to make pieces of cauliflower. I suggest to use your hands as much as you can. Most of the people use knife to cut it into small pieces which is absolutely wrong method. And they are habitual of using cooker to cook all vegetables which is also very wrong method of cooking pav- Bhagi. 
#  Ingredients you needed to prepare pav- bhagi for 4-6 person. 1/4 kg cauliflower, 125 gm fresh green peas, 3 big red tomatoes , 2 Shimla mirchi 6 boiled potatoes. Butter, oil, red chilli powder, turmaric powder, salt , everest pav bhaji masala etc . 
Method : Take a kadhai , add some oil let it heat , add green peas and finely chopped tomatoes and some turmaric powder and salt mixed it up and put it on low flame and keep dhakkan while it cooked . Then add Shimla mirchi and cauliflower and let it cooked on low flame. This step is lengthy and little bit time consuming but let me tell you it is a right method of cooking pav - bhagi in this method it won't harm's to any nutritious values of the vegetables . Once it's cooked separate it a flat parat ,  and smashed it eventually don't make a paste of it .
Keep ready a fine pest of green chillies, garlic, ginger and coriander leaves.
Note : put pinch of salt while making pest you will get smooth pest as you want. And it's add the aromatic smell while cooking.
Keep ready smashed potatoes.
In kadhai hit oil put butter when melted add some finely chopped onions allow to transulence in pink or light red colour mixed up the green pest control with the light flame . The pest shouldn't stuck down . If it is add little water and then add everest pav bhaji masala, red chilli powder turmaric powder and required amount of Salt. Add some water stier it and let it cooked on low flame . Then add smashed potatoes and mixed it up eventually.
Next step is for roasting pav, you can serve pav bhaji without roasting pav also.
But roasted pav in pest of spices goes very well for bhagi.
You just take 1 tsp ginger garlic paste along with finely chopped onions for roasting buns while using generous amount of butter and oil when they heated up pour prepared pest with pav bhaji masala and onions saute them eventually. Now place the slitted buns over them fry both sides until they are browned and crispy. 
Keep ready of finely chopped onions, coriander leaves and small pieces of lamons. Serve pav bhaji with roasted buttery buns sprinkle with the coriander leaves and always serve pav bhaji with the dices of butter on the top.
3) Misal- Pav : Is Another popular Maharashtrian breakfast . Which you can have this as a breakfast , Mid time lunch or brunch. There are many variations in misal pav . Kolhapuri Misal , Puneri Misal and Khandeshi Misal. The misal pav is consist of misal and pav and the final dish is topped up with farsan and sev garnished with finely chopped onions and with a price of lamon coriander leaves on it. Which is usually served with ladi pav butter milk or curd and piece of papad.
Misal pav is originally from Pune is known for its high spice content and unique taste.
Ingredients you need for preparation .
# 1cup grated coconut
# oil
# 4 big onions finely chopped
# 1 Garlic clove
# 1 piece of ginger
# 2 finely chopped tomatoes.
# 1 tsp coriander powder
# 1 tsp goda/ Kitchen King masala
# 250 gm Mataki ( Mode) 
# a little piece of gudh ( jaggery) 
# Farsan and sev 
# finely chopped coriander leaves.
# Make a pest of grated coconut, garlic, ginger and coriander leaves and pinch of salt and little water to make a fine paste.
Method : Heat some amount of oil in a cooker , fry paste until you smell aroma of the paste , add rinse mataki , add turmeric powder, red chilli powder, kanda Lasoon masala, goda/ kitchen king masala. Cooked it with only one whistle.let it cool.
Take a pan heat oil, fry onions until transulence in pink or light red colour. Then add tomatoes with a required amount of Salt. And all masalas as mentioned above. Let it covered with dhakkan let it cooked for a while. Remove cooker and mixed it up in this pan covered it and let it cooked for a while until you fill aroma which comes from it's unique masala. Serve it as mentioned above.

DISCLAIMER : Maharashtrian breakfast misal pav is a dish of legumes with spiced oil poured over and relished with a Pav it is highly havy but unhealthy to eat in the morning as it has not only oodles of Oil but even lot of spices and chilly powder which is not too good for your health to take early in the morning. Cooking is a divine ritual norish our soul and food is cooked with consciousness is a pleasure of filling of " GOD" and not for the sole.
